Prince's invented Nashville hot chicken in the 1930s, and while the original Ewing Avenue shack that made the dish famous is gone, the family recipe lives on at this South Nashville location on Nolensville Pike. It's the closest thing going to the source: same seasoning process, same fry technique, same insistence that the chicken rests in its cayenne oil for maximum burn rather than getting a quick surface dusting like most of the newer hot chicken shops that followed in Prince's wake.
This location is a real sit-down restaurant rather than a walk-up counter — order at the register, then find a table while they fry your bird to order, which takes a few minutes longer than fast food and is worth the wait. The heat scale runs Plain, Mild, Medium, Hot, Extra Hot, and XXX Hot, and it is not for show: Extra Hot and above will make your eyes water and your nose run, and staff will ask if you're sure before ringing up the top tiers. It comes on white bread with pickle chips soaking up the oil underneath, sides run to mac and cheese, greens, and baked beans, and the wings and tenders are just as good a vehicle for the sauce as the classic bone-in quarters.
